*A note about the Truffle we use: when we first developed this recipe, we were using real Truffle sourced from Pied-Monte, we felt the way in which they were sourcing these were morally and ethically acceptable (the dogs trained to find truffles are treated very well, and compassionately) However, as a small business this was not eventually cost-effective, and it allowed us to find alternatives that are arguably even more ethical - using no animals to source them. We now use Truffle infused olive oil, where the Truffle flavour is artificially created. Whilst it isn't the most 'natural source' of the ingredient, we feel this is the most ethical option at present.
