Sake Lees is the pulp from making Sake, in line with our low waste ethos, it has proved remarkable in scheese. A creamy inside with mature notes of fermented nutty rice and an outer rind of activated charcoal, this cheese is a show stopper!
HOW TO SERVE BEST?
Take out of packaging and allow the rind to dry out at room temp. When ready, enjoy with figs, sourdough bread and hearty red wine.

Once opened, wrap in paper towel to avoid moisture and keep in an airtight container. Keep refrigerated below 5C and consume within 3 days after opening. Freezes well, but best eaten melted once defrosted.
